A puff pastry cushion  filled  with tender pieces of duck, with shallots, shitake mushrooms and chestnuts in hoisin and plum sauce.

 

ROAST RACK OF LOCAL LAMB

Roast rack of local lamb served with a port, redcurrant

and rosemary sauce.
